THE FILE

BAKED, NEVER FRIED.

A panzerotti is pizza's folded cousin from southern Italy: the dough is rolled, filled, sealed into a half-moon and cooked whole, so the cheese melts inside its own pocket of steam. Most shops in Toronto deep-fry theirs. We don't.

At FBI Pizza the panzerotti goes into the same electric oven as our pies. Baking instead of frying keeps the crust light and blistered instead of greasy, and lets the filling — fresh mozzarella and San Marzano D.O.P. tomato sauce — stay the star. It's the same philosophy as everything else in the building: 00 Caputo flour, D.O.P. tomatoes, recipes that drive from Naples.

Make it yours

Start at $12.95 and add any topping from our pizza list for $2.15 each — pepperoni, mushrooms, hot soppressata, caramelized onions, gorgonzola, whatever your case requires. Every panzerotti comes with one San Marzano D.O.P. dipping sauce; extra house made dips (garlic parm, buffalo, hot chili infused honey and more) are $2.95.

INTERROGATION ROOM

PANZEROTTI QUESTIONS.

What's the difference between a panzerotti and a calzone?

Size and cooking method, mostly. A calzone is a large oven-baked folded pizza; a traditional panzerotto is smaller and usually deep-fried. Ours splits the difference the right way: panzerotti-style, folded and sealed, but baked in the pizza oven instead of fried — lighter crust, melted centre, no grease.

Is your panzerotti baked or fried?

Baked — always. It goes into the same electric oven as our pizzas, which gives the dough a blistered, golden crust you can't get from a fryer.

What comes inside, and can I add toppings?

The base is fresh mozzarella with San Marzano D.O.P. tomato sauce, made on our 00 Caputo flour dough. Add any topping from the pizza menu for $2.15 each — from mushrooms and pepperoni up to prosciutto di Parma and goat cheese.
